Next, make sure all surfaces you plan to use are clean and sterile. If making dairy foam, the heavy cream must be refrigerated prior to use. After cleaning the iSi charger and canister, fill the canister with the N2O charger.

Using a silicone scraper, stir the cream in the bowl while you add drops of the N2O charge by squeezing the charger slowly. Using circular motions gently mix the cream altogether to prevent air bubbles from forming or any cream splatter.

Make sure that the canister is completely filled with the N2O charge and then attach the charger. Finally, place the iSi whip on top of the canister and press down firmly. Gently open the spray nozzle of the iSi Whip and the cream foam should start forming.
